The Marga Mulino is a manual grain mill and cereal flaker from Marcato, designed for grinding whole grains into fresh flour and cutting grains into breakfast flakes. Three anodised aluminium alloy rollers, rotating at different speeds, handle both tasks from a single machine using a 6-position adjustment knob. It clamps to a worktop and is driven by the included handle or the Pastadrive motor, sold separately. Made in Italy.
The Marga Mulino handles a wide range of whole grains. Soft grains are suitable for both flaking and grinding; hard grains are suitable for grinding into flour. The 6-position knob controls roller distance, with setting 0 (marked in red) for fine flour and settings 1 to 3 for flakes of different thicknesses.
The Marga Mulino cannot be used with oily seeds such as almonds, flaxseed or chestnuts.
The Marga Mulino accepts the Pastadrive motor via the standard bayonet fitting, which leaves both hands free during milling. The motor can be used for all grains except rice. When grinding rice, the handle must be used.
Milling your own flour at home produces a noticeably fresher result than shop-bought flour, with more of the grain's natural oils and nutrients retained. Freshly cut flakes (oat, barley, rye) have a different texture and flavour to processed rolled oats, and retain more of the nutritional content of the whole grain. The Marga Mulino produces both from the same machine, making it a practical addition if you already make fresh pasta and want to mill the flour yourself.

The machine grinds wheat, durum wheat, spelt, kamut, buckwheat, oat, barley, rye and rice into flour. Rice must be ground using the handle only; the Pastadrive motor cannot be used for rice. Oily seeds including almonds, flaxseed and chestnuts are not suitable for this machine.
Yes, for most grains. The Marga Mulino accepts the Pastadrive motor via the standard bayonet fitting. The one exception is rice: when grinding rice, the handle must be used instead.
Setting 0 (marked in red) sets the rollers closest together for fine flour. Settings 1 to 3 increase the gap between the rollers, producing cereal flakes of different thicknesses. Freshly cut flakes are made by crushing whole grain seeds rather than grinding them, which preserves more of the grain's texture and nutritional content.
Yes. Flour milled on the Marga Mulino can be used directly for fresh pasta. Using freshly milled semolina or durum wheat flour produces pasta with a slightly different texture and flavour to shop-bought flour, with more of the grain's natural oils retained. A basic dough recipe is included in the instruction manual.
