Stackable Italian-made boxes and trays for proofing dough and drying fresh pasta. Solid boxes hold humidity in for controlled proofing and cold fermentation. Perforated trays let air through the base and walls, which is what fresh pasta, draining and ventilated storage need. Both share the same footprints and stack together, so you can mix them in a single column.
Designed for storing and proofing pizza dough, with the sealed walls and base that keep the surface soft through a long rest. Ideal for pizza dough, sourdough and bakery use, and well suited to preparing Poolish or Biga starters when paired with a lid or film wrap. Available in 20 x 30, 30 x 40 and 60 x 40, as boxes, lids and money-saving sets.
Openings run through the base and all four walls, so air reaches the contents from every side. Fresh pasta rests and dries evenly instead of sweating and sticking together, which makes these the trays to reach for after cutting tagliatelle, garganelli, trofie or gnocchi. They also drain washed salad and blanched vegetables, air-dry herbs, chillies and mushrooms, and cool baked goods without soft undersides. Available in 30 x 40 for home kitchens and small prep areas, and 60 x 40 for commercial production.
If you are proofing dough balls over 24 to 72 hours, choose a solid box, because you want the humidity held in. If you are drying or resting fresh pasta, draining produce, or storing anything that needs to breathe, choose a perforated tray. Both stack on the same profile and take the same lids, so adding one to the other later is straightforward.
