Genus Dei Pizza Dough Boxes: Sizes, Uses and Which to Choose

pizza_dough_box_small

Consistent dough fermentation starts with proper storage. The container you proof dough in affects airflow, hydration, temperature stability and how easily the dough handles when you come to shape it. Genus Dei dough boxes are made in Italy from food-safe polyethylene, designed specifically for pizza dough proofing and used by professional pizzerias and serious home bakers across the UK.

Why Dough Box Storage Matters

Standard containers, including cling-filmed bowls and generic food storage boxes, do not provide the consistent environment that pizza dough needs during fermentation. They trap too much moisture, don't stack properly, and make it harder to handle the dough without degassing it when you come to portion. A dedicated dough box gives the dough space to prove evenly, keeps it covered without sealing in excess condensation, and makes portioning and handling significantly cleaner.

The Genus Dei Range

Genus Dei boxes are available in three sizes, each with a matching lid and a combined box and lid set. All are made from food-safe polyethylene, stackable, and designed with a raised external base that improves airflow when stacked and protects work surfaces.

300 x 400mm boxes

The standard professional size. Fits most commercial fridges and many domestic larder fridges. Suitable for proofing multiple dough balls for a home pizza session or a small professional run.

600 x 400mm boxes

The larger professional size, used in pizzerias and food trucks where higher volume proofing is needed. Requires a full-size commercial fridge or large domestic American-style fridge.

200 x 300mm boxes

The compact size, added to the range for home bakers with smaller fridges or those making pizza for one or two. Fits easily into a standard domestic fridge shelf and suits smaller batch proofing.

Which Size Should You Choose?

The right size depends on your fridge space and how much dough you typically make. The 200 x 300mm box suits one to two pizzas worth of dough balls and fits on a standard domestic fridge shelf without rearranging everything around it. The 300 x 400mm box is the most versatile option, handling a home pizza session comfortably and fitting most larder fridges. The 600 x 400mm box is the professional standard, best suited to commercial fridges or large domestic American-style fridges where you need to proof a full batch in one go.

If you buy multiple boxes, all three sizes stack securely with the interlocking base and lid design.

Care and Use

Genus Dei boxes are lightweight, resistant to odours and staining, and straightforward to clean. Wash in warm soapy water or put them through a dishwasher. The food-safe polyethylene construction holds up to regular use without warping or cracking.

Before first use, wash the box thoroughly. Lightly oil the interior before placing dough balls in to prevent sticking. Store covered in the fridge for cold fermentation, or at room temperature for room temperature proofing depending on your recipe.
