Pasta Kitchen launched in 2016 with a straightforward aim: stock the tools that actually make a difference when you're cooking Italian food at home. We're a family-run business, and Italian cooking tools are genuinely what we know. We've been selling Marcato pasta machines and Eppicotispai tools the entire time, and every product we add to the range gets used and tested by our team at home before it goes on the site.
The range has grown a lot since then, but the approach hasn't. We choose products we believe in, from brands that have been making them properly for decades. Almost everything we sell is made in Italy. Marcato pasta machines are manufactured in Campodarsego, near Padova. Berkel slicers and knives are made in Italy, in the province of Varese. Cerutti Inox and Eppicotispai are Italian-made brands we've carried for years.
We're an authorised UK retailer for the brands we carry. Everything is supplied with UK-compatible plugs where applicable, VAT is included in the price, and there are no import duties or customs surprises on delivery.* You may be able to find some of these products cheaper from overseas sellers, but what you won't get is UK warranty support, correct specifications for the UK market, or anyone to call if something goes wrong.

Mafaldine is a Neapolitan pasta named in honour of Princess Mafalda of Savoy, daughter of Vittorio Emanuele III. The long, flat strips with ruffled edges were said to resemble the lace trim of royal dress. It is a wide, substantial shape that suits rich, clinging sauces — Italian sausage, ricotta, or slow-cooked tomato-based ragù are the traditional pairings. The Marcato attachment cuts consistent 8mm strips with the characteristic wavy edge from a sheet set at position 6 on the thickness dial.
Set the pasta machine thickness dial to position 6 before fitting the attachment. The mafaldine attachment is hand use only. For safety reasons it cannot be used with the Pastadrive motor. It fits the Atlas 150 and Atlas+ via the standard easy-change fitting on the back of the machine.
The body is chrome-plated steel with anodised aluminium alloy rollers. The anodising process produces a food-safe surface that releases no metal residue onto the pasta. The attachment is not dishwasher safe and should be cleaned with a toothpick or small brush after use. Do not use metal objects on the rollers.

Set the adjustment knob to position 6. This gives the sheet the right thickness to produce clean 8mm strips with well-defined wavy edges.
No. For safety reasons the mafaldine attachment cannot be used with the Marcato Pastadrive motor. The same restriction applies to the pappardelle and reginette attachments.
Never wash the attachment with water or put it in the dishwasher. Allow any dough to dry on the rollers after use, then remove it with a toothpick or small brush. Do not use metal objects on the rollers.
The wide, ruffled strips suit rich, substantial sauces. Italian sausage ragù, ricotta with a light tomato sauce, and slow-cooked meat sauces all cling well to the wavy edges. The shape is robust enough to stand up to sauces that would overwhelm thinner pasta.
