This Marcato mafaldine attachment turns your Atlas 150 or Atlas+ into a mafaldine pasta maker, cutting 8mm flat strips with wavy edges from a rolled pasta sheet. Mafaldine is a wide Neapolitan shape that suits rich, clinging sauces such as sausage, ricotta or slow-cooked tomato ragù. It is hand use only and, for safety reasons, cannot be used with the Pastadrive motor. Made in Italy.
Pasta Machine Setting for Mafaldine
Set the thickness dial to position 6 before fitting the attachment to the easy-change fitting on the back of the machine. It fits the Atlas 150 (Design and Classic), the Atlas+, the Atlas Roller 150, the Atlas Slide 150, Multipast and Pastaset, but not the Atlas 180.
Not compatible with the Pastadrive motor. Hand use only.

Which pasta machines is the mafaldine attachment compatible with?
The mafaldine attachment fits the Marcato Atlas 150 (Design and Classic), Atlas+, Atlas Roller 150, Atlas Slide 150, Multipast and Pastaset via the standard easy-change fitting on the back of the machine. It does not fit the Atlas 180. It is hand use only and cannot be used with the Pastadrive motor.
What thickness setting should I use?
Set the adjustment knob to position 6. This gives the sheet the right thickness to produce clean 8mm strips with well-defined wavy edges.
Can I use this attachment with the Pastadrive motor?
No. For safety reasons the mafaldine attachment cannot be used with the Marcato Pastadrive motor. The same restriction applies to the ravioli and reginette attachments.
How do I clean the attachment?
Never wash the attachment with water or put it in the dishwasher. Allow any dough to dry on the rollers after use, then remove it with a toothpick or small brush. Do not use metal objects on the rollers.
What sauces work best with mafaldine?
The wide, ruffled strips suit rich, substantial sauces. Italian sausage ragù, ricotta with a light tomato sauce, and slow-cooked meat sauces all cling well to the wavy edges. The shape is robust enough to stand up to sauces that would overwhelm thinner pasta.
