This Marcato bigoli attachment turns your Atlas 150 or Atlas+ into a bigoli pasta maker, cutting thick, round 3.5mm strands from a rolled pasta sheet. Bigoli is the thick, rustic shape of the Veneto, and its rough surface suits dense sauces such as duck ragù or anchovy. It is turned by hand with the machine's handle or by the Pastadrive motor, sold separately. Made in Italy.
Pasta Machine Setting for Bigoli
Set the thickness dial to position 2 before fitting the attachment to the easy-change fitting on the back of the machine. It fits the Atlas 150 (Design and Classic), the Atlas+, the Atlas Roller 150, the Atlas Slide 150, Multipast and Pastaset, but not the Atlas 180.

Which pasta machines is the bigoli attachment compatible with?
The bigoli attachment fits the Marcato Atlas 150 (Design and Classic), Atlas+, Atlas Roller 150, Atlas Slide 150, Multipast and Pastaset via the standard easy-change fitting on the back of the machine. It does not fit the Atlas 180. It is also compatible with the Marcato Pastadrive motor, sold separately.
What thickness setting should I use?
Set the adjustment knob to position 2 before attaching and rolling. This gives the sheet the right thickness to produce a proper 3.5mm round bigoli strand.
Can I use this attachment with the Pastadrive motor?
Yes. The bigoli attachment is compatible with the Marcato Pastadrive motor, sold separately.
How do I clean the attachment?
Never wash the attachment with water or put it in the dishwasher. Allow any dough to dry on the rollers after use, then remove it with a toothpick or small brush. Do not use metal objects on the rollers.
What sauces work best with bigoli?
Bigoli's rough surface suits thick, clingy sauces. Duck ragù is the classic pairing in Veneto cooking, but slow-cooked meat sauces, anchovy-based dressings, and robust tomato sauces all work well.
