Spaghetti is the most widely eaten pasta shape in Italy and needs little introduction. The 2mm round strand is versatile enough to work with a wide range of sauces, from simple aglio e olio to tomato, meat ragù, and seafood. The Marcato attachment cuts consistent 2mm round strands from a sheet set at position 4 on the thickness dial. If you want the same 2mm diameter with a square cross-section rather than round, the spaghetti alla chitarra attachment produces that shape.
Set the pasta machine thickness dial to position 4 before fitting the attachment. It works by hand with the included handle, or with the Marcato Pastadrive motor, sold separately. It fits the Atlas 150 and Atlas+ via the standard easy-change fitting on the back of the machine.
The body is chrome-plated steel with anodised aluminium alloy rollers. The anodising process produces a food-safe surface that releases no metal residue onto the pasta. The attachment is not dishwasher safe and should be cleaned with a toothpick or small brush after use. Do not use metal objects on the rollers.

The spaghetti attachment cuts a round strand, which is the standard shape found in most Italian cooking. The spaghetti alla chitarra attachment cuts a square cross-section, which gives the pasta a slightly different texture and a firmer bite. The square shape also holds thicker, chunkier sauces a little better. If you are making classic spaghetti dishes like carbonara, cacio e pepe, or bolognese, the round strand is the traditional choice. If you want a more rustic, central Italian style of pasta, the spaghetti alla chitarra attachment is worth considering.
Never wash the attachment with water or put it in the dishwasher. Allow any dough to dry on the rollers after use, then remove it with a toothpick or small brush. Do not use metal objects on the rollers.
