The Marcato Spaghetti alla Chitarra Attachment cuts square pasta strands at 2mm, replicating the shape traditionally made on a chitarra frame. Compatible with the Atlas 150 and Atlas+ pasta machines. Made in Italy.

The chitarra (meaning "guitar" in Italian) is a traditional tool from the Abruzzo region, consisting of a wooden frame strung with metal wires that cut pasta into square strands when a sheet is pressed through. The Marcato attachment replicates this with anodised aluminium rollers, producing the same 2mm square cross-section. The square shape gives the pasta a firmer texture and slightly more surface area than round spaghetti, which helps chunkier sauces cling to each strand. The recommended sheet thickness is position 4 on the dial.

Using the Spaghetti alla Chitarra Attachment

Set the pasta machine thickness dial to position 4 before fitting the attachment. It works by hand with the included handle, or with the Marcato Pastadrive motor, sold separately. It fits the Atlas 150 and Atlas+ via the standard easy-change fitting on the back of the machine.

Materials and Construction

The body is chrome-plated steel with anodised aluminium alloy rollers. The anodising process produces a food-safe surface that releases no metal residue onto the pasta. The attachment is not dishwasher safe and should be cleaned with a toothpick or small brush after use. Do not use metal objects on the rollers.
