A pizza oven brush is one of the most-used tools in any pizza kitchen. Before every bake, the oven floor needs to be swept clear of ash, flour residue and burnt debris. Burnt flour transfers bitterness to the pizza base, and debris left between bakes affects both flavour and temperature consistency. Brass is the standard bristle material for pizza oven brushes used at high temperatures. The bristles are stiff enough to dislodge debris and compacted flour from the oven floor, but softer than steel, which means they will not scratch or damage a pizza stone or refractory oven base. The wooden brush head is attached to the anodised aluminium handle with a secure fitting designed for repeated use at oven temperatures.
The integrated metal scraper is fitted to the handle just above the brush head. It is used to loosen stubborn residue (compacted dough, carbonised cheese, or hardened flour) before brushing it clear. Using the scraper first, then following with the brush, gives a more thorough clean than brushing alone and is standard practice in professional kitchens.
The 150cm handle keeps hands well away from the oven opening during cleaning, which is important when working with high-temperature ovens that retain heat even after the fire dies down. Anodised aluminium is lightweight and resistant to corrosion, a better long-term choice than untreated aluminium or painted handles that degrade with repeated heat exposure.

Yes. Brass bristles are soft enough not to scratch or damage a pizza stone surface, which is why brass is the standard choice for oven brushes rather than steel. Clean after the stone has been used and is still warm enough to have burnt off most residue, but has cooled enough to handle safely.
The scraper is used to loosen stuck-on residue before brushing. Run it across the oven floor first to break up compacted dough, carbonised toppings, or hardened flour, then follow with the brush to sweep everything clear. It makes a noticeable difference to the quality of the clean compared to brushing alone.
