The Cerutti Inox Tulip is a professional-grade perforated square pizza peel, designed in Italy by architect Itamar Harari, made from anodised aluminium with a distinctive red handle, and available in multiple blade sizes and handle lengths to suit home pizza ovens, wood-fired ovens, and professional use alike.
The Tulip square is the flat-bladed counterpart to the Tulip round peel, sharing the same Italian manufacturing, anodised aluminium construction, and riveted handle design. The square blade offers greater surface area and stability than a round peel, making it the preferred choice for handling larger pizzas, rectangular doughs, and higher hydration bases. It provides more support during launching, particularly when working with wider pizzas or when control and precision are more important than speed.

Square blade provides more stability and control when handling larger or rectangular pizzas
The Tulip is made from an anodised aluminium alloy. Anodising creates a hardened oxide layer on the surface of the metal, making the peel significantly more resistant to abrasion, corrosion and surface wear than untreated aluminium. It is also lighter than stainless steel, which reduces fatigue during longer cooking sessions.
The Tulip blade features a partial-length central rib, running approximately half the length of the blade, which Cerutti describe as providing stability while leaving the right space for the dough. The leading edge is precision-milled to a fine bevel for a cleaner entry under the dough, and the handle is secured with structural rivets so the join stays tight with regular high-temperature use.
The blade size should be slightly larger than the pizza you intend to make. The square Tulip is available in a wider range of blade sizes than the round, making it the natural choice as pizzas get larger or as you move into more professional setups.

Used in pizzerias and restaurants across Europe since launch.
This is a launching peel, used to load the pizza into the oven. For turning and retrieving during the bake you need a separate turning peel. We stock Cerutti stainless steel turning peels in several sizes, designed for use at oven temperature.
