The Marcato Pasta Fresca is an electric pasta maker and dough mixer in one unit: you add about 500g of flour and 250g of liquid, close the lid, and the 170W motor kneads the dough in 3 to 5 minutes before the same machine rolls it into sheets and cuts it. The three included accessories cut lasagne, fettuccine and tagliolini, so you go from ingredients to cut pasta with no hand-kneading and no separate equipment. Fitted with a UK plug. Made in Italy.
Pour the ingredients into the bowl, close the lid and side cap and switch the machine on; indicator lights show if either is not properly closed. Knead for 3 to 5 minutes until the dough is smooth and compact, then press the PULSE button to help push it out. The total of your ingredients must stay below the MAX line inside the bowl, and Marcato recommends running the machine for no more than 15 minutes without a break, with a 10-minute rest and the lid open after every three complete cycles of kneading, rolling and cutting.
The manual also includes base recipes for pizza, bread and biscuit doughs, so the mixer works for those as well as pasta.
The rolling unit has a 10-position thickness dial that runs from setting 0 (about 4.8mm) down to setting 9 (about 0.5mm). You pass the dough through the lasagne accessory several times at setting 0, folding and flouring it each time, then once at each setting until it reaches the thickness you want.
Marcato makes five further accessories for the Pasta Fresca, cutting spaghetti (2mm), bigoli (3.5mm), capellini (1mm), trenette (3.5mm) and pappardelle (10mm). We do not stock these, and the Pasta Fresca accessories are not interchangeable with the Atlas attachments. For a manual machine that takes a wide range of attachments, see the Atlas+ and our buying guide to the Marcato attachments.
Every other Marcato machine assumes you are bringing ready-made dough to it. This electric pasta machine handles the kneading as well, which removes the most physically demanding part of fresh pasta. If you make pasta regularly, knead by hand and find it tiring or time-consuming, it is the machine that solves that problem, and it is also the right choice if you want one piece of equipment for pasta, bread and pizza dough. If you would rather keep rolling by hand and add a motor to a manual machine, the Atlasmotor+ is the electric alternative, though it does not knead. Marcato designs the Pasta Fresca for home kitchens and for work areas such as café and restaurant kitchens, though the 15-minute limit on continuous use makes it a machine for batches rather than constant production. It is compact for what it does, at 31 x 15.5 cm.
Do not wash the machine or its accessories in water or in the dishwasher. Unplug it, remove the lid and clean the bowl and accessories with a cloth and brush; the combs under the cutting rollers lift out for easier cleaning.
