The chitarra (meaning "guitar" in Italian) is a traditional tool from the Abruzzo region, consisting of a wooden frame strung with metal wires that cut pasta into square strands when a sheet is pressed through. The Marcato attachment replicates this with anodised aluminium rollers, producing the same 2mm square cross-section. The square shape gives the pasta a firmer texture and slightly more surface area than round spaghetti, which helps chunkier sauces cling to each strand. The recommended sheet thickness is position 4 on the dial.
Set the pasta machine thickness dial to position 4 before fitting the attachment. It works by hand with the included handle, or with the Marcato Pastadrive motor, sold separately. It fits the Atlas 150 and Atlas+ via the standard easy-change fitting on the back of the machine.
The body is chrome-plated steel with anodised aluminium alloy rollers. The anodising process produces a food-safe surface that releases no metal residue onto the pasta. The attachment is not dishwasher safe and should be cleaned with a toothpick or small brush after use. Do not use metal objects on the rollers.

The standard spaghetti attachment cuts a round strand, which is the shape used in most classic Italian spaghetti dishes. The chitarra attachment cuts a square strand, which gives a firmer bite and slightly more surface texture. The square shape is traditional to Abruzzo and holds chunkier meat sauces and ragù a little better than the round equivalent. If you are deciding between the two, the round attachment is the more versatile everyday choice; the chitarra is worth adding if you want to explore a more regional, rustic style of pasta.
Never wash the attachment with water or put it in the dishwasher. Allow any dough to dry on the rollers after use, then remove it with a toothpick or small brush. Do not use metal objects on the rollers.
The square strand suits robust, textured sauces. Lamb ragù is the classic Abruzzese pairing, but beef ragù, sausage-based sauces, and chunky tomato and vegetable preparations all work well. The firmer texture holds up to heavier sauces better than standard round spaghetti.
