The Volano B114X is a collaboration between Berkel and Rizoma, the Italian precision engineering house known for its motorcycle components. The traditional flower flywheel gives way to a minimal three-spoke design, CNC-milled from solid aluminium with radial machining shaded toward the centre. It comes as a complete set, machine and a redesigned matching stand together, in Matt or Glossy white. The cutting specification matches the B114: a 319mm 100Cr6 blade, 215mm cutting capacity and an 11-position gauge knob. The matching stand is included.
Rizoma developed the B114X flywheel using a CNC milling process applied to aluminium alloy, in place of the cast construction of the standard flywheel. The three-spoke design keeps the same internally balanced squared profile as every Volano flywheel, so the mechanical behaviour is identical. The stand is redesigned to match, its base ring turned from a solid block of aluminium in place of the traditional feet. Both machine and stand are made in Italy.
The 319mm 100Cr6 chrome steel blade and slicing mechanism are shared with the B114. Slice thickness adjusts across 11 indexed positions from 0 to 1.5mm. A built-in single-movement sharpener is included.
The body is cast aluminium alloy with adjustable stainless steel and rubber feet. White paintwork is set off by chrome mechanical details throughout. The internally balanced flywheel keeps the squared profile of every Volano and drives the blade through a chain transmission, the robust system used across the range.
The stainless steel food plate detaches fully for cleaning. An assisted product press with a stainless steel rack and chromed aluminium structure keeps the food locked against the plate throughout the cut. The plate uses a quick-advance and return mechanism combined with a millimetric adjustment knob for fine product positioning.
The wide steel deflector attaches via a facilitated coupling and removes without tools for cleaning behind the blade. The stainless steel receiving plate is removable. A rear collection area gathers waste trimmings so they stay off the worktop.
A full chromed aluminium blade ring guard covers the blade, opening via a manual lever positioned under the machine tower. The operating controls are chromed steel, positioned to keep the operator's hand clear of the cutting edge.
The B114X comes complete with its matching Rizoma-designed stand. The base ring is turned from a solid block of aluminium in place of the traditional feet, and it is made specifically for the B114X.
Every Volano B114X ships with a Berkel #berkelcare cleaning kit, including a spray sanitiser and cloth designed for use on Berkel's chromed and painted surfaces.

Both share identical specifications and the same Rizoma-designed flywheel. The difference is the surface finish on the painted body: Matt white has a flat, non-reflective finish, and Glossy white has a polished, high-sheen finish. The choice comes down to personal taste and the room the machine will live in.

The B114X accepts products up to 215mm in diameter or 280 x 215mm rectangular, covering whole cured meats, large joints and hard cheeses.
