This triangular dough scraper, also called a dough cutter or bench scraper, is made from tough, food-grade polypropylene, shaped to slide flat under a ball of dough without catching or tearing it, and firm enough at the edge to portion or cut through dough cleanly. At 210 x 105mm with a 10.5cm working edge and weighing just 60g, it's smaller and lighter than a traditional stainless steel bench scraper, sized for lifting, turning and portioning dough rather than clearing a whole worktop. The edge is soft enough not to mark the inside of a plastic dough box. Made in Italy.
Lifting and Handling Dough
The scraper's flat, angled edge slides under a proofed dough ball without dragging or deflating it, useful when moving dough from a box onto a work surface or a shaped base onto a peel. Because the edge won't scratch plastic, it's also the tool to reach for when portioning or scraping down the inside of a Genus Dei dough box, rather than a metal scraper or bench knife.

Will this scratch my plastic dough boxes?
No. The scraper's edge is polypropylene, not metal, so it's designed to slide against the inside of a Genus Dei dough box without marking or scoring the surface.
How do I clean the scraper?
Wash it by hand in warm soapy water. It doesn't need any special care beyond that.
Is it big enough for large batches of dough?
It's sized for lifting, turning and portioning individual dough balls rather than heavy scraping. For cleaning down a large mixing bowl or worktop after a big batch, a wider bench scraper will do that job better.
Can I use it on a wooden worktop or board?
Yes. The polypropylene edge is soft enough not to mark wood, though like any scraper it will pick up flour and dough residue, so wipe it down between uses.
Is it dishwasher safe?
We recommend washing it by hand rather than in the dishwasher, to keep the edge in good condition.
