This beechwood rolling pin has a cutting profile built into its surface, so rolling it over a sheet of pasta dough presses a pattern of ridges straight through it, cutting spaghetti, tagliatelle, fettuccine or pappardelle in a single pass. It's made from solid beechwood, comes in four widths, and at 31.5cm overall with a 17cm usable cutting length, it's sized for a quick portion or two rather than a full production run. Made in Italy.

How It Cuts

Roll the pin firmly and evenly along a sheet of dough rolled to the right thickness for what you're making: around 1 to 1.5mm for tagliatelle and fettuccine, 1.5 to 2mm for pappardelle, and closer to 0.5 to 0.8mm for the finer spaghetti cut. At an even thickness and a steady rolling pressure, the ridges cut cleanly through the dough.

To stop the dough sticking to the pin as you roll, dust the rolling pin itself with a little flour before you start, not just the dough or the board.

Choosing Your Width

Each size is sold separately rather than as a set, so pick the one that matches what you're making: spaghetti at 3mm, tagliatelle at 5mm, fettuccine at 8mm, or pappardelle at 15mm. If you make more than one shape regularly, you'll want more than one pin, since each is fixed to a single width. FAQs

Does this cut all the way through the dough, or just mark it?
At an even thickness and a steady rolling pressure, it cuts cleanly. If a section only scores rather than separates, rolling over it a second time or rolling the dough a little thinner usually finishes the cut. Pulling the strands apart by hand is an option too, but it won't always give as clean a result, especially with a more delicate dough.
What size should I buy?
Each pin is a single fixed width: spaghetti (3mm), tagliatelle (5mm), fettuccine (8mm) or pappardelle (15mm). Buy the one that matches the shape you make most, or more than one if you want a few widths on hand.
How many portions does this cut in one pass?
The usable cutting length is 17cm, so it suits a sheet of dough sized for one or two portions rather than a full batch for a family meal.
What's the difference between this and the chitarra?
The chitarra uses strung wires to cut a full sheet of dough cleanly in one motion, in spaghetti or fettuccine widths. This rolling pin is more compact and portable, but relies on pressed ridges rather than wires, so it can need a second pass for a full cut.
How do I clean it?
Hand wash only. Don't leave it soaking in water, as this can cause the wood to warp or crack over time.
Can I use this for anything other than pasta?
It's designed specifically for cutting pasta dough. The ridges are sized and spaced for pasta widths, so it isn't suited to pastry or bread dough in the way a plain rolling pin is.
