Never wash any part of a Marcato pasta machine under running water or in the dishwasher. Water causes the internal components to rust and will void the warranty.
After each use, allow any dough to dry completely on the rollers, then brush it away with a dry cleaning brush and wipe down with a soft dry cloth. The removable combs and cutting rollers on the Atlas+ can be detached for more thorough cleaning with a brush. Do not use oil, solvents, or any liquid cleaner on the rollers.
Store the machine in a dry place. The Marcato storage bag keeps dust off the machine between uses.

The Atlas+ and Atlas Roller 150 accept the full range of 13 Marcato cutting attachments, covering shapes including linguine, pappardelle, bigoli, capellini, mafaldine, spaghetti alla chitarra and ravioli.
The Atlas 180 is not compatible with the standard 150mm cutting attachments due to its wider roller width. It produces lasagne, fettuccine and tagliolini only.
The Pastadrive motor fits all Atlas and Ampia line machines via a bayonet fitting. It attaches in three steps without any additional bracket. Note that for safety reasons not all cutting attachments are compatible with the Pastadrive motor when in use.

Replacement handles and clamps are available to purchase directly from Pasta Kitchen. If your machine requires an internal replacement part, contact us and we will assess whether the issue is covered under warranty. Machines within the warranty period will be repaired or replaced as appropriate. Out-of-warranty machines may be supported with spare parts where available.
All Marcato pasta machines purchased from Pasta Kitchen carry a 2-year manufacturer's warranty against manufacturing defects from the date of purchase.
The warranty does not cover damage caused by improper use, washing the machine with water, using non-Marcato accessories, or repairs carried out by unauthorised third parties.

The Atlas+ produces a 150mm wide pasta sheet across 10 thickness settings (0.6mm to 4.8mm) and is compatible with 13 cutting attachments. The Atlas 180 produces a wider 180mm sheet with the same 10 thickness settings, suited to larger lasagne and wider pasta shapes. The Atlas 180 is not compatible with the standard cutting attachments.
Start at the widest setting (position 0, which gives a 4.8mm sheet) for the first few passes to work the dough. Gradually reduce the setting with each pass until you reach the thickness you need. Going straight to a thin setting without working the dough first will cause tearing.
The most common causes are dough that is too dry, too wet, or hasn't rested long enough. Fresh pasta dough needs at least 30 minutes of rest after mixing before it goes through the machine. If the dough is cracking at the edges it is too dry; add a small amount of water and knead again. If it is sticking to the rollers it is too wet; dust lightly with flour. Yes. The Atlas+ is commonly used for rolling pastry, marzipan, and polymer clay. The roller mechanism and thickness settings work for any pliable dough or material of a similar consistency. If using for non-food purposes, keep a dedicated machine for food use.

The most common issue with the Regina is cranking in the wrong direction. The internal mechanism must rotate so that the auger pushes dough outward through the die. If you crank in the wrong direction the dough is forced back into the machine rather than extruded, which can cause blockages and put unnecessary strain on the mechanism. Before use, give the handle a slow half-turn and visually check that the mechanism inside is moving dough toward the die rather than away from it.
Usually caused by dough that is too wet. Dust the dough lightly with flour before each pass. Avoid over-flouring as this dries the dough out and causes tearing. If the rollers themselves feel sticky after use, allow any remaining dough to dry completely before brushing off with a dry cleaning brush. Never use water or oil on the rollers.
If your pasta sheets are coming out thicker on one side than the other, check that the machine is clamped securely to a flat, stable surface. A machine that is rocking or flexing during use will produce uneven sheets. Also check that the thickness dial is sitting cleanly in its position rather than between two settings.
On a new machine this is normal and eases with use. If a machine that has been used before becomes stiff, dried dough may have built up inside the rollers or cutters. Remove the cutting attachment if fitted, brush out any dried residue, and run the machine through its thickness settings a few times without dough to loosen it.
Check that the clamp is tightened properly and that any attached accessories are fully seated. If the rattle persists with no accessories attached, contact us.
