The Volano B114 is the largest and most detailed machine in Berkel's current classic flywheel range. A 319mm blade, the biggest Berkel makes in production, gives a 215mm cutting capacity (280 x 215mm rectangular), and every machine carries the flower flywheel with the Van Berkel International Milano inscription on the rim and an NFC authenticity tag cast into the body. At 55kg it stands firm through the heaviest use. A matching floor stand is available separately.
The 319mm 100Cr6 chrome steel blade is the largest on any current production Volano, sweeping through a whole prosciutto or a large mortadella in a single pass. Thickness sets across 11 indexed positions from 0 to 1.5mm and returns to a chosen setting exactly. A built-in sharpener keeps the edge ready.
The body is cast aluminium alloy with adjustable stainless steel and rubber feet that level out on uneven surfaces. The flower flywheel is internally balanced with a squared profile and drives the blade through a chain transmission, built for sustained, intensive use. The Van Berkel International Milano inscription runs around the flywheel rim, and gold decorative paintwork finishes the varnished panels.
The stainless steel food plate detaches fully for cleaning. An assisted product press with a stainless steel rack keeps the food locked against the plate throughout the cut. The plate uses a quick-advance and return mechanism combined with a millimetric adjustment knob for fine product positioning.
The wide steel deflector attaches via a facilitated coupling and removes without tools for cleaning behind the blade. The stainless steel receiving plate is removable and dishwasher-safe. A rear collection area gathers waste trimmings so they stay off the worktop.
A full chromed aluminium blade ring guard covers the blade, opening via a manual lever positioned under the machine tower. The operating controls are black anodised aluminium, positioned to keep the operator's hand clear of the cutting edge.
The B114 slices on any flat surface, and its matching Volano floor stand, shared with the B3 and Tribute, is available separately when you want it at standing height.

An NFC chip is cast directly into the B114's body during manufacture. Scanning it with a smartphone links to Berkel's certificate of authenticity for that specific machine, confirming it is a genuine Berkel and giving you a permanent record of the piece you own.
