The square blade holds more dough than a round blade of the same width, because the corners carry what a curve cuts away, and the perforations let loose flour drop away before it burns onto the stone. Blade Sizes

The blade wants to be slightly bigger than the pizza it carries, so the base sits fully supported with a little margin around it.

  • 33cm handles pizzas up to 12 inches, which covers most home pizza ovens
  • 36cm handles pizzas up to 14 inches
  • 41cm handles pizzas up to 16 inches, for large wood-fired ovens and professional use

Blade width matters as much as pizza size: worth checking against the opening of the oven before ordering, since even the right blade for the pizza can be too wide for a compact oven's mouth. The 33cm here does not fit the ZiiPa Piana, and a 33cm blade is also too wide for a Gozney Roccbox or Arc Lite; see the FAQs below for oven-by-oven fit.

FAQs

Should I buy a square or round pizza peel?
Square if your dough is wet and sticky, or your pizzas are big for the blade. The corners hold more, so a heavy or floppy base is fully supported and does not droop over the edge as you carry it. Round if your pizzas come out round and you are happy with them, because nothing sticks out past the dough to catch on the oven mouth.
What size pizza peel do I need?
The blade wants to be slightly larger than the pizza you make most often. The 33cm blade covers pizzas up to 12 inches and suits most home pizza ovens. The 36cm takes you to 14 inches for larger garden ovens. The 41cm covers 16 inches and is aimed at full-depth wood-fired ovens and professional use.
Which pizza peel fits an Ooni or Gozney oven?
A 33cm blade on the 30cm handle. That combination is sized for compact countertop ovens with a shallow chamber, including the Ooni Koda 12, Gozney Roccbox and ZiiPa Piana. The longer handles here run to 150cm and are specified for pizzeria ovens, not countertop ones.
Is a square peel better for wet, sticky dough?
Yes. A wet dough sags as you carry it, and the square blade holds more of it while that happens. The holes help too: less metal touching the dough means it slides off cleanly instead of sticking to the blade when you go to launch.
How do you clean a Cerutti pizza peel?
Hand washing in warm soapy water and drying is all it needs. It is not dishwasher suitable, and at 30cm to 150cm long it would not fit one anyway. The anodised surface resists the staining and corrosion that untreated aluminium picks up, so there is nothing to season or oil. Brushing loose flour off the perforations after each session keeps it working properly.
Do I need a turning peel as well as a pizza peel?
If you cook above 350 degrees, yes. A launching peel is too large to manoeuvre inside a hot oven without catching the rim, and at Neapolitan temperatures a pizza needs turning two or three times inside ninety seconds. The peel launches, a pizza turning peel rotates and retrieves. Most people who cook pizza regularly own both.
Will this peel fit the ZiiPa Piana?
No. The Piana's cordierite stone and oven opening are sized for a blade of around 31cm or under, and every Cerutti Inox peel starts at 33cm. For Piana compatibility, the ZiiPa Aquila is the fit, at 30.5cm.
Will this peel fit my Ooni or Gozney oven?
It depends on the blade size and the oven's opening. The 33cm blade fits an Ooni Koda 12 or Volt 12 (opening around 33.7cm) and an Ooni Karu 12 (around 36.8cm), but is too wide for a Gozney Roccbox (around 30.2cm) or Arc Lite (around 32.5cm). The 36cm blade fits a Karu 12 or a Gozney Dome (around 41.1cm), but not a Koda 12, Volt 12 or Roccbox. The 41cm blade fits an Ooni Koda 16 (around 52cm) or a Dome, with very little room to spare on the Dome. Figures are the ovens' published opening widths, so worth checking against your own model before ordering.
