The Aquila is a 30.5cm perforated stainless steel pizza peel from ZiiPa, designed for loading and unloading pizza from the Piana oven. The head is thin and flexible, sitting on a durable beech handle for a stable, comfortable grip. Evenly spaced perforations let excess flour fall away before the pizza goes in, keeping the base clean and preventing burnt deposits on the stone. At 91cm total length, there's enough reach to load and retrieve cleanly without getting close to the heat.
The perforations serve a specific purpose: excess flour on the base of the dough burns in a 400°C oven and can make the underside of the pizza bitter. The Aquila's perforations allow that flour to fall through before cooking without any additional effort. The stainless steel head is lightweight and thin, so it slides cleanly under a rested dough and glides onto the stone without disturbing it.
The edge of the peel is bevelled to a thin profile, which makes it easier to slide cleanly under a rested dough without disturbing it and to retrieve the pizza from the stone without catching. For a compact oven like the Piana, a thin leading edge is useful given the limited clearance inside.
The handle is made from durable beech, shaped for a comfortable grip and stable control when loading and retrieving at arm's length. A cord is attached to the end of the handle so the peel hangs from a hook in the kitchen or outdoor cooking area between uses.

The Aquila is a loading and unloading peel: you use it to slide the prepared pizza onto the oven stone and retrieve it once cooked. It is not a turning peel. For mid-cook rotation, the Piana's built-in rotating stone handles that without any additional tool.
Excess flour on the base of the dough burns at high oven temperatures and can make the pizza base taste bitter. The perforations let that flour fall through before loading, producing a cleaner base without any extra steps.
Hand wash is recommended to preserve the stainless steel head and beechwood handle. Avoid abrasive cleaners on the head.
The Aquila's 30.5cm head is sized to match the Piana's 31cm stone, giving you enough clearance to load and retrieve a pizza cleanly.
