The stainless steel bristles sweep away burnt flour and fine residue, and the integrated stainless steel scraper handles anything more stuck on. The oak handle ends in a leather hanging strap.

Always wait for the stone to cool completely before cleaning. Cordierite is thermally unstable while it holds heat and contact with the brush on a hot surface risks stress fractures. Once cool, residue is fully set and brittle and brushes off far more cleanly.

Most pizza stone brushes are built for larger domestic or professional ovens and come in at 40cm or longer. That length is impractical in a compact oven like the Piana where the stone is 31cm across and the oven mouth is narrow. When should I clean the pizza stone?

Always wait until the oven and stone have cooled completely before cleaning. Using the brush on a warm or hot stone risks damaging both the brush and the stone surface. ZiiPa recommend adding a small amount of fuel at the end of your last pizza to burn off any remaining residue at high heat, then leaving the oven to cool fully before brushing.

Can I use water to clean the pizza stone?

No. Cordierite pizza stones are porous and should never be cleaned with water or detergent. Moisture absorbed into the stone can cause cracking when the oven next reaches high temperature. Use the Ranella dry on a completely cool stone only.

Will the Ranella scratch the stone?

The stainless steel bristles and scraper are designed for use on cordierite without damaging the surface. Apply light, even pressure and the bristles do the work without needing to scrub hard.

How do I care for the Ranella brush itself?

Wipe with a dry or slightly damp cloth after use. Do not submerge in water or put in the dishwasher, as this will damage both the oak handle and the leather strap over time.

Is the Ranella compatible with other pizza ovens?
