The Ranella is a 2-in-1 cleaning brush from ZiiPa designed specifically for compact pizza ovens like the Piana. At 33.3cm it's the right length for a small oven's cordierite stone: long enough to clean the full surface comfortably, short enough to work precisely inside a compact oven mouth. The stainless steel bristles sweep away burnt flour and fine residue, and the integrated stainless steel scraper handles anything more stuck on. The oak handle ends in a leather hanging strap.

Always wait for the stone to cool completely before cleaning. Cordierite is thermally unstable while it holds heat and contact with the brush on a hot surface risks stress fractures. Once cool, residue is fully set and brittle and brushes off far more cleanly.
