Bigoli is a thick, extruded pasta from the Veneto region, traditionally made with buckwheat or whole wheat flour. The rough, porous surface catches dense sauces well — it is most commonly paired with duck ragù, anchovy-based sauces, or slow-cooked meat ragu. The Marcato attachment replicates that texture through the anodised aluminium rollers, producing a consistent 3.5mm tube from a standard egg or whole wheat dough.
Set the pasta machine thickness dial to position 2 before fitting the attachment. The bigoli attachment works by hand with the included handle, or with the Pastadrive motor, sold separately. It fits the Atlas 150 and Atlas+ via the standard easy-change fitting on the back of the machine.
The body is chrome-plated steel with anodised aluminium alloy rollers. The anodising process produces a food-safe surface that releases no metal residue onto the pasta. The attachment is not dishwasher safe and should be cleaned with a toothpick or small brush after use. Do not use metal objects to clean the rollers.
