The Atlas+ is Marcato's current pasta maker, and it's what turns making pasta from something you do into something you genuinely enjoy, silky sheets and true rounded spaghetti, with a result that tastes like it took far more effort than it did. Redesigned rollers make that spaghetti possible at low dial settings, a shape the old Atlas 150 couldn't produce, while the same rollers switch to flat tagliolini at higher settings. Made in Italy, from a company that's built pasta machines there since 1965, it rolls and cuts four fresh pasta types from one compact machine.
The redesigned rollers are the whole story here, one profile doing two jobs depending on where you set the dial.

Marcato holds a patent on the anodising process behind these rollers, and it's not decoration. The surface is deliberately micro-rough rather than polished smooth, which grips the dough as it rolls, so fewer passes are needed to reach the right thickness, and leaves the pasta with a slightly porous surface once cooked, generally understood to help sauce cling better than a smooth surface would.
The Atlas+ works with a wide range of Marcato attachments, from the popular Bigoli, Linguine and Ravioli through to fine vermicelli and wide pappardelle. Add the Pastadrive motor for hands-free rolling, or a Tacapasta drying rack for drying fresh-cut pasta before it hits the pan.
