The Piana turns pizza on a dial instead of a peel. Turn it, the cordierite stone rotates inside, and the door stays shut the whole cook, so the base cooks evenly without you opening up and losing heat every twenty seconds. Fired by real wood pellets, it reaches 400°C in around 20 minutes and cooks a 12-inch Neapolitan pizza in 90 seconds, and at 10kg with foldable legs it's light enough to move wherever you're cooking.

How It Works

The rotating stone is the whole idea, and everything else is built around making that work well.

  • You still turn the pizza during the cook, but the dial does it instead of a peel, so there's no reaching into the oven, no losing heat with the door open, and no separate turning peel to buy.
  • A 31cm cordierite stone sits on a rotation mechanism controlled from a single external dial.
  • Wood pellet fired for genuine wood-fired flavour, with the option of small kindling or broken briquettes when that's what's on hand.
  • Cordierite draws moisture from the dough as it cooks, giving a crisp, dry base.
  • An integrated dial thermometer shows you when it's hit temperature and how fast it recovers between bakes.
  • A top-loading fuel hatch lets you refill the pellet drawer mid-session without losing heat.

Using the Piana

  • Pairs naturally with the Aquila peel, sized specifically for the Piana's opening, so pick the two up together and you're ready to cook from day one.
  • A 5kg bag of pellets goes a long way, around 18 pizzas per bag as a rough guide, roughly 250g to bring the oven up to temperature and about the same again through each pizza after that. Actual usage depends on how quickly you're cooking and prepping between pizzas. Longer gaps between pizzas mean more fuel spent keeping the oven up to heat.
  • Topping up the fuel drawer through a longer session is part of the rhythm of cooking with real wood, and the Donato dispenser keeps it fed continuously.
  • The stone picks up colour and character with use. A well-marked stone is a sign of an oven that's earning its keep, and it cooks just as well either way.

FAQs

Do you need a pizza peel to turn the pizza in the Piana?
No. You turn a dial on the outside of the oven to rotate the cordierite stone, so the pizza cooks evenly without reaching in with a peel mid-cook. You only need a peel to load and remove the pizza.
How long does the Piana take to reach cooking temperature?
Around 20 minutes from cold to reach 400°C. Cold or wet weather can add a few minutes, and the pellets you use affect it slightly.
What size pizza does the Piana cook?
Up to 30cm (12 inches) across, the standard size for a Neapolitan pizza and enough for a generous single portion.
Can the Piana use any wood pellets?
It works with any food-grade wood pellets. ZiiPa recommend beech pellets for steady heat and clean flavour. Avoid pellets treated with binders or additives.
Does the Piana have to be used outdoors?
Yes. Like all solid-fuel ovens, the Piana gives off combustion gases and must be used outside in a well-ventilated space. It is not suitable for indoor use, conservatories, or covered areas without good airflow.
Is the Piana covered by a warranty?

Does the Piana come with a pizza peel?

ZiiPa products come with a 2-year warranty from the date of invoice, covering the full ZiiPa range, not just pizza ovens. It covers manufacturing and conformity defects: a faulty part, a workmanship fault, or a product that doesn't match its description.

Making a Claim

Contact us with your proof of purchase and photos or a short video of the issue. We'll liaise with ZiiPa on your behalf to arrange a repair, replacement part, or full replacement depending on the fault.

What Isn't Covered

Normal wear and tear, and damage from impact, a fall, incorrect assembly or use, lack of maintenance, or using accessories or fuels other than the ones recommended. On pizza ovens, blackening of the glass, soot marks, heat discolouration or patina, and marks on the refractory stone are expected with normal use and aren't covered on their own; a genuine defect, such as an abnormal and uniform deformation of a component, is covered.

Care Instructions
  • Allow the oven to cool fully before cleaning or covering.
  • Clean the cordierite stone dry only. Do not use water or detergent on the stone.
  • Wipe the exterior with a damp cloth and mild soapy water. Avoid abrasive cleaners on the powder-coated finish.
  • Empty and clean the removable fuel drawer regularly to clear ash.
  • Cover or store away when not in use to protect the finish outdoors.
